Perhaps it’s because I have a touch
of Irish in my blood.
Or maybe it’s just
because I’m a mama trying desperately to get some veggies in her children.
Whatever the reason, I decided to get a
little tricky with dinner a few weeks ago.
I grated up a whole yellow squash and hide it inside a quiche. To make things a bit trickier healthier, I
made the quiche without a crust and substituted turkey bacon for the fatty variety. Then in a final burst of trickery
inspiration, I renamed the whole thing; crustless zucchini and bacon quiche became
bacon pie. So, what resulted from all this
trickery? An amazing thing. There was an actual kiddie stampede to the
dinner table. Had I stuck with the name ‘quiche,'
I can guarantee the kids would not have touched it.
I think those tricky little leprechauns were
on to something!
